Frosted Banana Bars - Yum!

I have a few bananas turning just a bit brown on my kitchen counter so I am planning on making these bars today. They are so moist and good without the cream cheese frosting that I usually don't add that for us to eat around home. But the frosting does finish them off nicely if you are taking them to a potluck or for coffee time at church.

This is a Taste of Home recipe. My sisters and I all really enjoy their magazines.

Frosted Banana Bars

1/2 cup butter -- softened
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 medium ripe bananas -- mashed (1 cup)
Frosting:
1 8 oz. cream cheese -- softened
1/2 cup butter -- softened
2 teaspoons vanilla
3 3/4 cups powdered sugar -- up to 4 cups

In a mixing bowl, cream butter and sugar. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. Stir in bananas. Spread into 15 x10" baking pan. Bake at 350* for 20-25 minutes or until toothpick comes out clean. Cool. For frosting, in a mixing bowl, beat cream cheese, butter and vanilla. Gradually beat in enough pwd. sugar to achieve desired consistency. Frost bars. Store in frig.

Mmmmm... I made these. They were wonderful fresh - but have to say I enjoyed them more on day 2 after they had been refrigerated!!!!
